Zoma, the city’s most elegant Ethiopian eatery, prepares and serves its dishes with a nouvelle cuisine flair. For example, the well-spiced azifa salad (lentils flecked through with onions and chilies) is served on leaves of endive and not injera (a thin, spongy, flat teff grain-based bread that is used to scoop up and wrap food) as it is served elsewhere. The kitchen manages to avoid buttery overkill with vegetarian and meat dishes. The best way to sample Zoma’s offerings is by ordering combination platters, available in meat and vegetarian choices. Zoma’s injera bread is moist and greaseless, which makes it excellent for soaking up every drop. Gomen (ginger-laced collard greens), shiro wett (a berbere-coated fusion of chickpeas and lentils), kik aletcha (a savory purée of split peas), and doro wett (a spicy stew of tender chicken topped with a hard-boiled egg) are the hands-down favorites.
